Tonnarello with pasteurised egg yolk cream, pecorino romano, crispy black pork cheek and flambéed black pepper

Main courses
Marinated tuna sashimi in ponzu and mustard sauce, smoked with aromatic herbs, coated in toasted sesame seeds, pink grapefruit, rosemary crushed potatoes, and caramelized red Tropea onion.
Bluefish fillet served at room temperature with caramelized red Tropea onion, Aeolian capers, Taggiasca olives, and Sicilian citrus-infused oil.
Catch of the day fillet with crispy skin, grilled eggplant cream, black olive soil, and sautéed wild herbs.
Grilled swordfish steak from the Strait with lemon and parsley sauce.
Beef tournedos on turmeric-infused potato fondue, with green peppercorn sauce, sautéed mushrooms, and crispy almonds.
Slow-cooked black pig rack, seared on a hot grill with herb-infused jus, rosemary potato cake, spinach, and confit cherry tomatoes.
